Looking for fiber rich meals that go beyond another plain salad? Think black bean bowls, lentil soup and oats piled high with raspberries.

There’s plenty to choose from here, whether you want something to eat with a spoon or tuck into a pita.

You can keep things simple or add a few extra toppings. These pictures are meal inspiration rather than complete recipes, so fiber content will depend on your ingredients and portions.

Start with beans, lentils, vegetables or whole grains, then build a plate you’re excited to eat.

Meal ideas worth saving

black beans and sweet potato

We’re starting off strong with this colorful bowl. I love the browned sweet potato cubes beside the black beans and rice.

That big scoop of guacamole in the middle looks so good with the red salsa.

Keep a few tortilla chips around the edge if you want something to scoop with.

lentil and vegetable soup

If you are looking for a bowl with plenty going on, this one is for you. Brown lentils, chunky carrots and celery fill the broth, with chopped herbs scattered over the top.

The bread tucked against the rim is a lovely serving idea. You could choose whole-grain bread for your own bowl.

chickpeas and greens over rice

How good do those little red tomatoes look? Chickpeas and wilted greens sit in a pale sauce over a generous bed of rice.

I especially love that the tomatoes are left whole rather than disappearing into the topping.

Try brown rice underneath if you’d like a whole-grain version.

raspberry swirl oats

I am obsessed with those raspberry swirls. The oats sit above a deep red berry layer, with more raspberries piled right on top.

If you want to follow the same serving idea, use a clear glass so you can see the fruit through the sides. No need to stir everything together.

red and green stuffed peppers

These stuffed pepper halves are such a pretty lunch idea. The red and green peppers hold a grain-like filling beneath a melted golden topping, with red sauce spread across the plate.

For your own version, try a bean-and-quinoa filling. You can keep the same colorful presentation without having to guess every ingredient inside.

white bean spaghetti

Don’t want another bowl of soup? No problem!

This spaghetti has white beans, red tomatoes and dark olives tucked between the strands. The chopped green herbs finish it off.

I’d choose whole-wheat spaghetti for a version with more fiber. Keep the beans rather than letting the pasta take over the whole plate.

chickpeas with all the toppings

This may just be my favorite bowl here. There’s so much to love, from the browned chickpeas and cauliflower to the thin radish slices and bright pink onions.

Quinoa, leafy greens and golden-edged slabs sit underneath little spoonfuls of green sauce. Save this one if you like a bowl with lots of different toppings.

loaded sweet potato halves

Who doesn’t love a loaded potato? This sweet potato half holds black beans beneath a melted cheese topping, with plenty of orange flesh still showing around the edges.

It’s another way to pair sweet potatoes and beans without reaching for a rice bowl. I’d add a simple green salad alongside.

chunky split pea soup

If you’re looking for soup that isn’t blended smooth, go with this split pea idea. Carrot pieces and skin-on potato chunks show through the thick green base.

That spoonful gives you a good look at the mix.

white bean avocado toast

How good does this toast look? Not gonna lie, the bright egg yolks caught my eye first!

White beans sit over mashed avocado, with eggs and red pepper flakes on top.

This is a lovely starting point for breakfast or lunch. Choose whole-grain toast if you want to bring another fiber source into the meal.

mushrooms and bright green peas

The mushroom fans are going to love this! Big browned pieces cover a pale grain base dotted with green peas.

I love that the mushrooms stay chunky rather than being chopped into tiny bits.

For your own take, try barley with peas and mushrooms. A few cheese shavings would follow the topping shown here.

lentils under orange mash

This is another pretty way to serve lentils. The cut portion shows a lentil-and-mushroom filling beneath a thick orange mash topping, with little herb sprigs scattered over it.

A sweet potato topping would be a lovely choice for your own version. Keep the filling chunky if you like this layered look.

black bean and corn quesadillas

I am obsessed with this stack of quesadillas. Black beans, yellow corn and little pieces of red onion peek out between the browned tortillas.

You can serve yours in wedges like these with a dip on the side. Try whole-wheat tortillas if you want another way to add fiber.

chicken and brussels sprout platter

If you are looking for a meal to serve on one big platter, then this one is for you. Sliced chicken runs down the middle, with browned Brussels sprouts, leafy greens and grains underneath.

I especially love the scattered pomegranate seeds and nuts. Keep plenty of those vegetables and grains on your own plate alongside the chicken.

vegetable skillet with egg ribbons

There’s no shortage of vegetables in this skillet! Broccoli, mushrooms, red pepper and leafy greens are mixed through the grains, with green soybeans visible between them.

The thin yellow egg ribbons are my favorite detail. Try that topping instead of mixing little pieces of egg throughout.

berry-topped pancakes

Want something a little different for breakfast? These thick pancakes have berries showing through the sides, plus blueberries, round golden fruit and seeds on top.

The pale drizzle runs all the way down the stack.

You can’t tell the flour from a photo, so choose an oat or whole-grain pancake recipe for your own fiber-focused version.

mixed bean chili

This bean chili looks so inviting. Dark beans, red kidney beans and pale beans share the bowl with corn and chunky vegetables in a red base.

I love the chopped herbs over the white topping. You could finish your own bowl with plain yogurt or sour cream if you like that serving idea.

chickpea salad pita

Don’t want to eat your chickpeas from a bowl? No problem there!

This pita pocket holds chickpeas, tomato slices, red onion and plenty of leafy greens.

Try a whole-wheat pita for your version. Keep the filling peeking out at the top like this rather than hiding all those colors.

falafel and hummus bowl

I love this falafel bowl with its little sections of toppings. The hummus and chopped herb salad take up one side, while cucumber, radish, olives and pickles fill the other.

The lemon wedge is worth keeping if you’re following this serving idea. Squeeze a little over your salad just before eating.

tomato and greens flatbreads

Last but definitely not least, we have these colorful little flatbreads. I love the chopped red tomatoes over the wilted greens and pale topping.

The browned onion strips are a lovely extra detail.
